Required Experience: 2+ years as a sous chef in a fine dining setting, 4+ years as a cook.
Classic training is preferred. Should be able to perform all aspects of meat and fish butchery, sauces, and comfortable on all stations. Pastry experience a plus.
Needs experience with ordering and receiving, Inventory management, food costs, recipe development, managing and directing BOH staff (including dishwashers/porters). Bi-Lingual English/Spanish. Financial acumen a plus.
