About you.

We seek a collaborative, energetic, curious, and motivated chef to join our R&D team. Our ideal candidate is a passionate individual whose creativity in the kitchen comes from a thoughtful and analytical mind.

About the role.

Through problem-solving and critical thinking, you will develop compelling menus, recipes, and operations that link our clients’ food and restaurants with their guests and consumers. As a member of the TCE Culinary Team, you will partner with clients from restaurant start-ups to the country’s largest F&B brands. You’ll be continually engaged in the development of new menu items provide the culinary rigor needed to develop a multitude of new products and operational platforms. You will gain exposure to every corner of the industry and will have the opportunity to solve for sourcing, equipment, layout, and operational complexities. Although you will not find yourself on a traditional restaurant line, practical expertise and a passion for the craft is essential. It is not a prerequisite that you come with experience in innovation strategy or consumer insights; however, an eagerness to learn, and the ability to grow from a culinary foundation is a must.

Responsibilities.

Note: It is not mandatory that applicants have direct experience with all the below. We expect R&D chefs to grow into the role through on-the-job training.

Project work.
  • Develop recipes in TCE R&D kitchen on behalf of our clients. Source ingredients and equipment to support culinary development.
  • Execute food production and client tastings.
  • Produce best-in-class documentation of recipes and operating materials.
  • Conduct training sessions to review recipes.
  • Immerse in client operations, materials and marketplace to identify operational/culinary strengths and weaknesses.
  • Collaborate with internal teams to develop a culinary point of view on clients’ brands, menus, operations, and staffing models.
  • Ensure feasibility of creative work.
  • Assist with production and delivery of presentations (e.g. keynote) to clients.
  • Create tailored operational and development parameters for each project.
Client management.
  • Act as primary liaison for culinary and operational matters.
  • Support project managers in communicating with clients.
  • Garner trust, promote and develop long-standing relationships.
Internal work.
  • Build and maintain relationships with vendors and food manufacturers.
  • Work with culinary team colleagues to maintain a clean and organized kitchen and storage areas.
  • Participate in the selection and hiring of new culinary team members and interns.
  • Conduct menu and industry research in the field, online and through assessments
  • Occasional travel is required.

 Table stakes and pluses.

  • 3+ years of experience cooking in a professional kitchen. A mix of fine dining, casual and quick service is a plus.
  • Culinary degree, or demonstrably strong culinary foundation.
  • Experience in managing food production, creating and completing prep lists, ordering ingredients, prioritizing and delegating kitchen tasks.
  • Ability to work both independently and collaboratively to lead the development of new menus and items.
  • Ability to articulate and debate a point of view on clients’ culinary and operational matters.
  • Ability to communicate, verbally and in writing, rationale for culinary and operational recommendations. 
  • Ability to probe colleagues, clients and partners for insight and information.
  • Comfort with MS Office and/or Mac OS.
  • Passion for food, interest in latest industry news, food blogs, websites and trends.
Hours & fine print.

40-50 hours/week between the hours of 8:00am - 6:00pm (Monday - Friday). Ability to travel.
