Rubirosa Pizza & Ristorante is looking for a Sous Chef to join our team. Currently we are operating a PICK UP AND DELIVERY MODEL due to the coronavirus and are looking for a strong organized leader to join our team.

Rubirosa is a nine-year old restaurant with a family restaurant history dating back 60 years in NYC. We are a neighborhood family-owned restaurant specializing our 60 year old thin crust pizza recipe as well as updated versions of Italian-American classics.
Ideal candidate will be excited to work in a true family atmosphere with amazing staff, regulars and the ability to truly have a voice / culinary creativity within the Rubirosa concept.

High Volume Experience!!!
DOH : maintains a DOH compliant kitchen at all times.
Pro-Active Mindset - Ability to problem solve quickly and put systems in place to prevent potential issues that may arise
Communication: Ability to present challenges, issues to BOH management and work with constructive feedback (ie: not a lone wolf)
Staff Development: Experience in staff coaching and discipline conversations with an overall motivation toward employee success.
Strong Line Skills - Ability to step into any station when needed to lead the team
Strong Expediting Skills - Ability to expedite tickets in high volume environment
Culinary Creativity: Create dishes that align with our Rubirosa concept
Kitchen Admin: Ability to write recipes, cost out dishes, and implementing new menu items with ease
FInancial Insight: Understands of the basic concepts of food costing, payroll budgeting, and labor scheduling
Ordering: Ability to order based on the Chef's/Owners specification and maintain a appropriate inventory
HR: Experience in filtering, interviewing new candidates as well as disciplinary action and termination
The fine print:
Must have a NYC DOH food protection certificate
Three years experience - High Volume
Italian / Pizza experience is preferred
Conversation Spanish is a plus!
