Job Details
The James Beard Award winning bar in Williamsburg, Maison Premiere, is currently hiring experienced Excutive Chef that can maintian and holfd the following standards: 
 
 
  • Develops and directs daily Maison Premiere operations in the kitchen.
  • Directly supervises, line cooks, prep cooks, porters and dishwashers as well as the food runners.
  • To guide, coach, counsel, develop, train and inspire direct reports in a leadership role which promotes teamwork and enhances the overall service experience and maximum productivity.
  • Schedules, conducts and/or participates in daily staff meetings as well as attends weekly Maison Premiere Management Meeting when required.
  • Interviews, hires, trains, disciplines, and coordinates personnel changes with the General Manager.
  • Orchestrate the flow and timing of all outlets in order to enhance the guest service experience and streamline culinary output.
  • To work closely with other members of the Maison Premiere back of the house management team to develop the skill sets to enhance their career development opportunities.
  • To work in concert with the Maison PremiereGeneral Manager, Floor Managers and Beverage director to provide the highest level of culinary experience. To act as a liaison between the front and back of the house wherein a positive work environment can prosper.
  • Assign staff work to achieve maximum labor/dollar efficiency.
  • To work in concert with the porters to ensure proper hygiene, safety and sanitary conditions in accordance with state and local department authorities.
  • Complete and perform individual annual reviews on a timely basis.
  • Communicate and enforce company policies, rules and regulations, provide guidance and direction for staff, which supports the aforementioned Maison Premiere procedures.
  • Possesses outstanding food service training and product knowledge.
  • Monitors food costs.
  • Must possess knowledge of the proper technique for food preparation and cooking techniques for all food products and be able to execute any of it at any given time.
  • Responsible for putting out a consistently high quality product to the customer from all stations of the kitchen.
  • To control all food related kitchen operations, including ordering, receiving and maintaining inventory levels.
  • To secure best prices on all purchases while maintaining Maison Premiere quality standards.
  • To establish relationships with purveyors and contact new purveyors as new products become available.
  • Set station assignments including opening and closing side work duties, end of shift inventory reports, etc.
  • Recommend hiring, separation and issuance of disciplinary actions as required.
  • Work the pass 
    • Make sure all food coming out of the kitchen is properly cooked, properly seasoned and on time for customers
    • Ensure guests get food in an orderly and consistent fashion
    • Monitor food production and prep work for dinner and brunch service

Compensation details

Fully paid healthcare after 3 months on the job, and quarterly bonuses.
