Job Details

The Line Cook prepares food to order according to our recipes, procedures, quality expectations and speed levels.  The Line Cook maintains cleanliness of kitchen work areas and equipment.

Major Responsibilities
  • Maintains, stocks, restocks, cleans and organizes work area.
  • Prepares food according to recipes, procedures and standards, within allowable time guidelines.
  • Responds to all guests’ special requests.
  • Cleans and maintains workspace.
  • Follows sanitation and safety standards.
  • Safely operates and maintains cleanliness of equipment (slicer, mixer, etc.).
  • Practices proper and safe food handling, storage, receiving, stocking and rotating procedures.
  • Other assigned duties from the culinary staff.
  • Follows all company policies as outlined in the company handbook.
  • Prepares food items to recipe with regard to quality, consistency and time standards.
  • Ensures all cleanliness, sanitation and safety standards are maintained.
  • In doing so, continues to create new business and avoid guest complaints.
  • Additional accountabilities include but are not limited to “Site Specific Duties” (see attached).
  • Able to read and understand English.
  • Able to lift and carry up to 40 pounds (bags/boxes) and carry short distances.
  • Able to stand and walk during 8-10 hour shift.
  • Understands hazards include but are not limited to cuts, burns, slips, trips and falls.
  • Able to work closely with other staff at a fast pace, under pressure, maintaining quality standards.
  • Able to interact verbally with other line positions.
  • Able to work closely with other staff members, often in confined areas
  • Able to complete additional tasks assigned by management
  • Able to meet all standards for safe food handling.
  • Able to work at approximately 36-inch table/stove and reach in approximately 36 inches.
  • Able to reach (up to 6 feed overhead), bend, stoop and wipe.
  • Has experience and knowledge of kitchen equipment, including but not limited to knives, slicer, salamander, stove, oven, mixer and Robot Coupe.

This spring, James Beard-nominated chef Clay Conley of Palm Beach’s renowned Buccan, makes his highly anticipated return to Miami for the opening of Chateau Miami, a new dining destination in the heart of Brickell. Known as the iconic Chateau Petit Douy and built in 1930 as the private home of prominent Floridians John and Sheelah Murrell, the building has been historically preserved and re-designed by an all-star team including designer Ken Fulk, Inc., The Smith Architecture Group and landscape architects Nievera Williams. Located at 1500 Brickell Avenue, sitting in stark contrast to the modern skyscrapers that surround it, the unique restaurant space will transport guests to another time and place with its beautifully manicured gardens, vintage chandeliers, and verdigris conservatory. To complement Chateau Miami’s stylish yet comfortable environment, Chef Conley will bring his signature open-fire cooking and progressive global cuisine he has become nationally recognized for. Guests can expect such dishes as “Carbonara” Fonduta Raviolini with quail egg, bacon, peas, and parmesan; Charred Organic Carrots with black hummus and black harissa; and "Medianoche” Ham & Gruyère Pain Perdu with mustard butter, cornichons and frisée (brunch). The innovative bar program will feature a mix of modern and classic cocktails created exclusively for Chateau Miami by Proprietors, LLC, the mixology masterminds behind New York City’s award-winning bar Death & Co. Classic cocktails from a bygone era will be updated with a modern twist, such as the Millicent (green chili vodka, pear brandy and vermouth); while new classics like The Sheelah (Japanese whiskey, pineapple gum, St. Germaine, Suze and fresh lime), named in tribute to the original owner of Chateau Petit Douy, will round out the bar menu.
