Become a member of the culinary team at the award-winning Ace Hotel Chicago (2018 Conde Nast Traveler Magazine "Hot List"), and its critically acclaimed restaurant, City Mouse, which is helmed by Chef-Partner Jason Vincent (Food & Wine "Best New Chef;" James Beard Award nominee), and Executive Chef Matt Danko (James Beard Award nominee). Since opening in summer 2017, City Mouse has earned rave reviews from the Chicago Tribune and New York Times, and was named to Chicago Magazine's 2018 "Best New Restaurants" list.

SUMMARY

The line cook is responsible for consistent preparation of menu items in accordance with Ace Hotel Food and Beverage specifications. Must adhere to all City of Chicago food safety and sanitation regulations. Must have City of Chicago food handlers’ certificate.

CORE FOCUS & ESSENTIAL RESPONSIBILITIES

Qualified candidates must be able to satisfactorily complete the following responsibilities. Other duties may be assigned.

  1. Prepare menu items according to Ace Hotel high quality standards and recipes as established by Executive Chef and Director of Food & Beverage.
  2. Taste the dishes as they’re prepared and adjust according to the standards set.  
  3. Keep station clean before, during, and while closing each shift - inclusive of a “leave it better than I found it mentality” for all the kitchen areas.
  4. Alter menu items to accommodate guests’ dietary needs as requested.
  5. Communicate with co-workers when taking over and finishing each shift.
  6. Maintain assigned station throughout shift, ensure par levels of ingredients and equipment are available.
  7. Maintain prep work during shift, during down slowed business times.
  8. Work efficiently and multitask.
  9. Work as a member in a team of line cooks to effectively and efficiently prepare each dish.
  10. Use proper kitchen safety protocols in regards to food preparation (storage, transportation, preparation, etc.) and equipment usage.

  1. Ability to satisfactorily communicate in verbal and written English with guests, management, and co-workers to their understanding.

  4. Maintain complete knowledge of all hotel services/features and hours of operation.
  5. Other language, mathematical, and reasoning abilities.
  6. Ability to comply with physical demands.
  7. Knowledge and understanding of Atelier & Ace Culture & initiatives
  8. Ability to compute basic mathematical calculations.
  9. Must be able to maintain a flexible work schedule.
