Job Overview:

Tired Hands Brewing Company is looking for a qualified person to join our Back of House team as Sous Chef at our Tired Hands St. Oner’s, in Philadelphia. Working under the Tired Hands Executive Chef, and the St.Oner’s Head Chef, our Sous Chef is responsible for assisting in managing the daily operations of the kitchen & providing leadership & direction to Back of House staff. The Sous Chef ensures that all recipes, food preparations, and presentations meet Tired Hands Brewing Company’s specifications and commitment to quality. 


This positions is charged with maintaining a safe, orderly and sanitized kitchen operation by performing the following duties: 

  • Directs daily operations including: inventory (ordering, receiving and returning), proper food preparation and storage, and coordinating menu changes. 
  • Maintains necessary inventory levels by utilizing order guide, and ensuring this “living” document is maintained as needed. 
  • Schedules Cooks and all Back of House staff to effectively execute daily operations during both prep and service.
  • Ensures that cooks keep all stations stocked and clean before and during service.
  • Ensures that kitchen staff execute all recipes and plate all dishes according to specifications set by Executive Chef, and Head Chef. 
  • Ensures all kitchen staff are performing their job responsibilities and meeting expectations set by Head Chef. 
  • Ensures that all kitchen staff understand of proper use and maintenance of major kitchen equipment.
  • Meets weekly with St.Oner’s staff to review operations.
  • Integrates new Back of House staff by training, scheduling, and disciplining staff; clearly communicating job expectations; enforcing Tired Hands Brewing Company policies and procedures.
  • Coordinates and schedules employee reviews (twice yearly) of St. Oner’s Back of House staff; collaborates with Executive Chef and Head Chef on employee reviews (twice yearly) of St. Oner’s kitchen staff. 
  • Ensures kitchen, dish, and dry storage areas remain clean and organized.
  • Must be able to successfully work all kitchen/prep stations.
  • Maintains a safe and healthy back of house environment by following and enforcing implemented sanitation standards and procedures; complying with health and legal regulations.
  • Fosters an environment that promotes creativity.
  • Continuously improves the skills, knowledge and morale of all employees.
