Job Details
M.Wells Steakhouse is seeking a sous chef to round out our culinary management team. The level of this position will be a reflection of your abilities; we're flexible enough to take on an entry level or more senior sous, depending on the candidate. This is an opportunity to work directly with chef Hugue Dufour to develop and express the unique conceptual philosophy of the restaurant.
 
Since 2013, M. Wells has housed an unorthodox meat palace in the bones of a former body shop, replete with a live fire grill and burbling trout tank. Chef Dufour forged his reputation for gonzo creativity helming Montreal's Au Pied de Cochon, and has channeled that vision into a restaurant drawing on the inspiration of Queens, Quebec, and his travels around the world. We're constantly re-inventing ourselves on the palate and the plate, and the path of our growth and development is defined by the people we bring on board; collaboration is at the heart of our kitchen.
 
Qualified candidates should have good taste in all things, a broad culinary interest, and a vivid imagination. Every chef will be expected to work a station, so the ability to manage oneself as well as others is a pre-requisite for this position. Previous management experience is a plus but not necessary.
 
The restaurant is open for dinner only, seven nights a week. 40+ hours of availability required.

M.Wells has been a mainstay of Long Island City since husband and wife team Hugue Dufour and Sarah Obraitis opened the beloved M.Wells Diner in 2010. Although the diner was forced to move after a yearlong magical run, they've since opened M.Wells Dinette inside MoMA PS1 and M.Wells Steakhouse down the road on Crescent Street. The Steakhouse is an anthem to the classic American restaurant with the usual M.Wells twists. The old auto body repair shop is home to a live trout tank, a towering raw bar, and a wood-fire oven and grill. Dufour dishes out his take on the classics--generous cuts of steak, a smoked herring caesar salad and onion soup with bone marrow--alongside a more eclectic menu of venison, pig's head, duck tagine, and lamb's liver.
