Job Details
About Us:
We are a small group of passionate professionals at a French wine bar in Shaw (NW DC, right off Green/Yellow line metro). In addition to the wine, we will also have a full bar (French spirits only), and we serve a small menu of French bistro cuisine.

Our ideal prep/line cook meets the following criteria/requirements/responsibilities:
- Knowledge of French cheeses and European charcuterie
- Superior knife skills
- Prepare, manage, execute daily/weekly prep lists
- Assist with inventory
- Practice zero-variance in regards to product
- Multi-task in the kitchen - ability to switch between prep and line during service
- Ability to execute menu, including full prep of all items, as we will not be utilizing a freezer for daily menu items. Prep will be done on a daily basis to ensure freshness and quality.
- Work within limited space and with limited equipment - you must be highly organized and able to execute all tasks within these limited constraints
- Communication with ownership/management regarding all manner of BOH operations on a daily basis
- Adherence to all health code standards
- Full open availability, including nights/weekends/holidays
- Ability to lift 50+ lbs.; able to stand for long periods of time
- Ability to operate all kitchen equipment, as well as maintain and keep all equipment clean and fully operational

Bonus qualities:
- Culinary school degree or some formal training
- Previous experience with preparation of French foods
- Advanced knowledge of cheese/charcuterie
- Current DC Food Handler's license
