Overview

The Sous Chef provides strategic and operational leadership, guidance, direction, and tactical expertise for the club’s restaurant operations. The successful candidate will have excellent leadership and communication skills, thorough knowledge of banquet operations and an interest in following and adapting to current food and beverage trends.

Fitler Club is a members-only lifestyle club. The club features state of the art fitness and wellness facilities, spa, salon, 10,000 sq. ft. of event spaces, bowling lanes, screening room, two restaurants, lounge and pool club. 

 

 

Responsibilities

●      Maintain a clean, polished, organized and professional kitchen at all times

●      Maintain and ensure proper food safety and sanitation standards in compliance with the Philadelphia Department of Health and Executive Director, Culinary

●      Assist and help coordinate menu and recipe development

●      Assist and help oversee the daily operation of the restaurant kitchen

●      Ensure the correct and consistent preparation and presentation of all food items

●      Monitor food preparation, production, ordering, receiving, cost, quality and consistency and maintain appropriate par levels on all inventory

●      Assist in controlling operating expenses through effective budgeting, purchasing and inventory procedures

●      Attend and participate in regularly scheduled departmental team meetings

●      Supervise and manage the kitchen staff including but not limited to line cooks, prep cooks, and stewards

●      Work closely with the operations team to participate in planning and effective operation of events throughout the club

●      Participate in special events as requested; marketing, public relations or charity events including planning, coordinating, implementing and executing these events

●      Interact with members and their guests, develop awareness of members likes and preferences

●      Maintain profitability of department to achieve overall club objectives

●      Manage prime cost line items to protect against waste and misuse

●      Evaluate cost effectiveness of all aspects of operation

●      Assist with implementing cost saving and profit enhancing measures

 

 

 

 

 

 

 

Qualifications

●      2-4 years of management experience of high-end hotel, fine dining restaurant, catering facility or private club with similar operational responsibilities.

●      Graduate from an accredited culinary institution is preferred.

●      Existing relationships with local purveyors, vendors, farmers, fisheries and bakeries.

●      Must have lead a team of at least 10 employees.

●      Good communication skills, both verbal and written

●      Ability to supervise staff, including, assignment of duties, evaluating service, and conducting disciplinary action as required

●      Ability to prepare and analyze data, figures

●      Possess good computer skills, proficient in Excel, Word and knowledge of operating POS systems

●      Knowledge and experience of food purchasing.

●      Budgetary analysis capabilities required

●      Knowledge of food service techniques and cost controls such as manpower, productivity, food cost and other expenses
