Portale Restaurant is an upscale-casual Italian restaurant opening in Chelsea this fall by Alfred Portale the James Beard award-winning chef and best-selling cookbook author. We are searching for talented, hardworking, team and hospitality-oriented individuals who can help us create a warm and welcoming environment that serves thoughtful and delicious food and beverage offerings. We want serious people who know how to have fun.

We are looking for an enthusiastic and experienced restaurant professionals to join our opening team. This is an opportunity to create a new restaurant from the ground up, which will require a tremendous work ethic and the utmost dedication to achieve excellence. Job Description: Line Cook

Report to: Executive Chef

Classification: Full Time

Operations:
• Manage the station from start to finish
• Cook menu items in cooperation with the rest of the kitchen staff
• Ensure that all food products have been prepared correctly before cooking and are cooked to perfection per Portale’s recipes and standards
• Complete shift work, as assigned, timely and thoroughly in accordance with department standards
• Cook and prepare food for consumption by the customer and employee meals
• Clean and stock station as assigned, by the start of each shift
• Clean equipment, as assigned, thoroughly and in a timely fashion
• Keep floor in work or service area clean, dry and free of debris
• Maintain a sanitary kitchen and workstation
• Maintain a clean and safe kitchen
• Maintain all kitchen equipment and utensils
• Maintain appropriate portion-control
• Manage proper storing temperatures according to DOH regulations
• Control and limit waste
• Follow proper rotation procedures according to DOH regulations
• Follow recipes to meet Four Horsemen’s standards
• Be a team player—support and assist your fellow team members whenever possible
• Communicate problems and ideas to the Sous Chef, Chef de Cuisine and/or Assistant General Manager

Essential Functions:
• Able to lift 30+ pounds
• Fluent in both written and spoken English
• Must have basic math skills
• Maintain friendly, helpful and positive attitude at all times
• Polished personal presentation; Grooming meets Company standards, as outlined by Employee Handbook
• Communicates information effectively and efficiently
• Ability to comprehend and follow written and verbal direction
• Able to work nights, weekends and holidays, and variable schedule, per the needs of the business
• Ability to walk, stand, and/or bend continuously and for extended periods as required to perform essential job functions
• Ability to perform essential job functions under pressure, maintains professionalism when working under stress
• Attends mandatory staff meetings
• Adherence to company, state, and county sanitation standards
• Strict adherence to posted schedule and clock in/out at times
• Unpack, stock, & organize all items in and around the restaurant to maintain highest level of cleanliness possible
• Perform all other related and compatible duties as assigned by the Management Team
• Adhere to all HR policies and procedures

WORK EXPERIENCE REQUIREMENTS
2+ year of experience as Line Cook or similar caliber concept

EDUCATION REQUIREMENTS
High school diploma or GED preferred
NY Department of Health & Mental Hygiene Food Protection Certificate, preferred
