Job Details
Kismet is looking for a new Executive Sous Chef to join our team! The ideal candidate has several years of management experience and is looking to grow into the next stage of their career.

Kismet was nominated for a James Beard Award for Best New Restaurant, and Chefs Sara Kramer and Sarah Hymanson were named 2017 Best New Chefs by Food + Wine Magazine. Kismet works in partnership with Jon Shook and Vinny Dotolo and is part of the restaurant group which includes Animal, Jon & Vinny's, Son of a Gun, Petit Trois and Trois Mec. 

The Kismet ethos is as dedicated to quality and sustainability in food, beverage and service, as it is to maintaining a collaborative, sustainable and inclusive work environment.

The Executive Sous Chef at Kismet is expected to accomplish the following:
  • Write effective and fair schedules.
    • Work with Sara and Sarah to create new menus for regular service and special events.
    • Work with Sara and Sarah to write recipes and adjust recipes as changes occur.
  • Weekly service meeting with Sous Chefs.
  • Daily service meeting with full staff regarding changes/low quantities, 86’s.
  • Communicate and taste staff on specials/new dishes, BOH and FOH.
  • Work with Sous chefs on their ideas for menu items and execution of new dishes.
  • Delegate prep/service responsibilities to cooks.
  • Manage all BOH employees (prep cooks, line cooks, dishwashers, etc.)
  • Quality control all items/dishes for all services. Ensure line checks are completed
  • Be aware of and execute/direct DOH protocol.
  • Build and maintain positive working relationship and cohesion between FOH and BOH
  • Handle all HR matters, including, but not limited to:
  • Interview, hire and fire personnel.
  • Discipline staff members, when merited, in line with systems in place- write ups, etc.
  • Conflict resolution with staff members
  • Maintain food and labor costs, and communicate cost concerns to Sous Chefs.
  • Communicate with Sara and Sarah regarding menu changes/issues, personnel changes/issues, vendor/product issues, etc.
  • Consult with and oversee Sous Chefs on ordering.
  • Compile/check invoices for accuracy. Regularly check prices from vendors to assess best costs, taking best quality into account.
  • Give specific direction to prep cooks on prep and receiving/storing/rotating product.
  • Consistently maintain a high level of cleanliness throughout the restaurant, including the dish station, kitchen, walk-in, prep areas and common areas.
  • Ensure that all staff has clean uniforms and all proper tools at each shift.
  • Other duties as assigned
