Scope of Position

The Drink Maker creates high level cocktails requiring extensive culinary knowledge, an elevated degree of skill and the ability to transform ingredients into high concept cocktails on par with fine dining culinary creations. The Drink Maker maintains the Bar environment and all equipment clean and tidy, Preparation of beverage components before service and execute creation of designated beverages for guests in the The Aviary and The Office, as well as for  the main dining room and or in-room Dining upon request; Follows recipe standards and procedures taught by Culinary leaders.  Adheres to direction from Management team during service to receive orders and prepare menu items at the correct pace. Carve and transform ice to be used Impacts guest experience through creation of drinks rather than face-to-face interaction. Must ensure sanitation standards are achieved.

Duties and Supporting Responsibilities

  • Prepare food and beverage components and ingredients and set up station for service
  • Execute creation of designated foods and beverages for guests
  • Works with speed and precision to prepare intricate, precise and delicate creations.
  • Set up, service and breakdown beverage stations for private functions in The Aviary or The Office.
  • Abides by all state, federal and corporate liquor regulations pertaining to serving alcoholic beverages to minors and intoxicated guests.
  • Responsible for cleaning bar, setting up and breaking down the bar
  • Prepares syrups, tinctures, shrubs, bitters, and other base components for cocktails
  • Replenishes beverages as necessary and checks with guest for overall satisfaction
  • Ensure that all silver and glasses are wiped and spotless
  • Maintaining cleanliness of the bar area at all times and well stocked with supplies and beverages including:
    1. straightening bar area continuously
    2. cleaning counters, floors, shelves and refrigerators in their work station
    3. checking coolers and shelves to ensure proper stocking of beer, wine, liquor and all beverages
    4. stocking bar with ice as needed
    5. Checking for supplies such as but not limited to: dry goods, sugar, salt, stir sticks, straws, napkins… as per specified in side work list.
    6. requisition of additional supplies as needed
    7. cutting fruits, vegetables (if applicable) and other garnishes
    8. retrieving garnishes from kitchens
    9. restocking bar with clean glasses


  • Measures and makes recipes as directed by culinary management.
  • Drink Maker is required to have knowledge of drink preparation inclusive of ingredients with tasting to ensure consistency throughout their shift
  • Maintains the bar area throughout preparation pre-service time and throughout service.
  • Maintains storage areas and vessels with care and thorough attention to detail.
  • Stores ingredients, bottles, glassware, and service pieces precisely.
  • Adheres to safety and emergency procedures to protect staff, guests, and property.
  • Reports any maintenance deficiencies in a quick and timely way.
  • Demonstrates courteous and cooperative behavior when interacting with public and staff; acts in a manner that promotes a harmonious and effective workplace environment.
  • Monitors bottle and ingredient levels regularly and communicates in writing the ordering needs to management
  • Anticipate guest needs, as to where guests will never have to ask for anything
  • To wish each and every guest a warm farewell and thank them for coming, if possible
  • Report all suspicious persons or activities and hazardous or unsafe conditions to the management
  • Ensure equipment is in proper working condition i.e.: blender, ice equipment… and report to Management if not
  • Provide excellent service at all time to all of our guests
  • Measures and makes beverages following set menu recipes and standards.
  • Studies and maintains expert-level knowledge of beverage menu, ingredients, and The Aviary/MOHG brand standards.
  • Works effectively with fellow colleagues.
  • Actively participates in the positive relationship between FOH and BOH teams by maintaining steady stream of communication with entire team.
  • Fully complies with all health department requirements for food and beverage safety and staff hygiene as well as the company FLSS&E standards.
  • Assist in production and maintenance of ice for cocktails, spirit pours, and water service including but not limited to :
  • Hand sculpting various shapes and sizes for cocktails utilizing ice picks, hand saws, and chisels
  • Producing ice stocks using spices, bitters, syrups, stocks or spirits
  • Freezing ice stocks in various ice molds and pulling ice from molds & storing ice after frozen
  • Preparing various ice types using Superchiller
  • Freezing ice directly into glassware
  • Stocking and restocking bar and service stations from production and storage areas
  • Monitor ice & ingredient levels regularly and communicates ordering needs to management
  • Maintaining ice equipment and tools by using care at all-times.
  • Complete requisitions with management, obtains proper signatures, submit, pick up, transport and store all items
  • Prepare items to be used for beverages, e.g. juice produce and create tinctures
  • Prepare coffee service
  • Participates in inventory as led by leaders.
  • Engages actively during continuing education courses both within and outside the hotel
  • Provide instruction and/or guidance for guest and employee safety in fire or other emergency situations
  • Respond to all guest questions.  Provide guest assistance, direction and information as requested when working in public areas
  • Good knowledge of food and beverage in order to service and up sell our product, including liquors and cocktails.
  • Assist Cocktail Service Agents in dining room when necessary
  • Attend all food and beverage training classes
  • Following the posted opening and closing duties and side work sheet
  • Attend daily pre meal/communication meeting
  • Generate a climate of enthusiasm
  • Inspect glassware to be clean and free of cracks, imperfections, etc… before serving to guests.
  • Assist, when requested by leaders, the polishing of the silverware and glassware

  • Reading, writing and oral proficiency in the English language.
  • Ability to perform fabrication of beverage ingredients and garnishment efficiently.
  • Food Handler Certificate
  • Basset certification.
  • Historical experience of 3-5 years or more in bars or restaurants in food or beverage production.
  • Willing to work a flexible schedule and holidays.
  • Be a self-motivator and motivator of others
  • Work in a safe, prudent and organized manner.
  • Have a good knowledge of food and preparation
  • Have a good knowledge of wine
  • Have an excellent knowledge of mixed drinks and cocktails
  • Be able to relate to all levels of guests and management.
  • Have the ability to handle multiple tasks at one time.
  • Have excellent communication and organization skills
  • Have the ability to handle guest requests in a detailed manner
  • Maintain a clean and healthy personal hygiene and grooming.
