Brothers And Sisters Pastry Assistant

Foreign National is a cultural concept development group promoting the integration of food, drink, and art with the fundamental belief that all components create a strong, healthy, and viable community.  Brothers And Sisters is one of two concepts developed for The LINE Hotel, offering complete food and beverage components for guests, situated within the hotel lobby and servicing in-room Delivery requests.  

Foreign National is currently recruiting a Pastry Assistant for Brothers and Sisters.  The Pastry Assistant will have the opportunity to work alongside James Beard nominated Executive Pastry Chef, Pichet Ong. 

Responsibilities

Specific duties are listed, but not limited to:

  • Pastry Assistant will be working alongside the Executive Pastry Chef to assist with baking and pastry decorating.
  • Ensuring that all recipes, food preparations, and presentations meet Company standards and commitment to quality.
  • Baking items and preparing them in a timely manner.
  • Actively support in all pastry production to ensure items reflect high standards of quality, consistency, aesthetics and taste.
  • Support the new product development cycle from recipe development to creating samples and then to a manufacturable product.
  • Interface with production personnel to solve problems, enhance quality, and assess pastries.
  • Organize recipe formulas and solutions for assigned projects, products and maintain database of the ideas.
  • Completing full project follow-up and completion of necessary project documents, including recipe creation.
  • Effectively communicate with internal staff in order to fulfill and address any issues or needs requested by sales and product development.
  • Maintains a safe, orderly and sanitized kitchen. Ensuring an organized kitchen throughout your shift and at closing.
  • Actively participates as a member of the pastry team in decision making processes, attending required meetings, etc.
  • Performs other duties as assigned by manager.

Required Skills/Qualifications:

  • Must have 2+ years related experience in restaurant kitchen operations with a proven track record of leading a professional, efficient, high quality, service-oriented operation.
  • Ability to lift 35lbs.
  • Must be familiar with health requirements, OSHA regulations and Department of Labor regulations as they pertain to all kitchen and restaurant employees.
  • Ability to work on flexible shift including overnight, weekends and holiday on rotation basis.
