Located in West Town, Pastry Chef Aya Fukai has opened her own bakery, Aya Pastry, which utilizes her extensive pastry experience to showcase artisan breads and whimsical cakes and pastries. Aya’s background in fine dining restaurants and upscale hotels brings a new level of quality and understanding of her clients. The mission at Aya Pastry is to support Chicago chefs and business owners by providing an extensive bread and pastry program unmatched by other bakeries.
Aya Pastry always keeps the chef in mind when creating breads. The thoughtful and versatile bread menu includes breads such as: country sourdough, signature baguettes, shokupan and chicago buns. Pastries will include unique savory and sweet croissants, jumbo “dino” macarons, Samoa cakes, pancake cookies, as well as a colorful array of celebration cakes, which will be available for wholesale purchase.
Aya, who was nominated in 2017 for James Beard Outstanding Pastry Chef and won Eater’s National Pastry Chef of the Year in 2016, has worked for many respected restaurants throughout Boston and Chicago. Most recently, Aya cultivated the bread and pastry program for the two-Michelin starred restaurants, Sixteen at Trump and Ria at the former Elysian hotel. The management team at Aya Pastry shares Aya’s impressive background and experience in fine dining and upscale hotels. The incredible talent of Georgia Vinzant, Tim English and Leslie Farrer strengthens the execution of Aya’s mission.
