Chef Alex Seidel was the recipient of the 2018 James Beard Award for Best Chef Southwest. He opened the Denver neighborhood institution Fruition Restaurant in 2007, followed by Fruition Farms Creamery, an artisan food producer, in 2009, and Mercantile dining & provision at Union Station in 2014. Chook, his most recent restaurant, a fast-casual charcoal rotisserie restaurant, opened it's first location in 2018 with more to come in 2019. 2020 will see the opening of Mercantile DIA at Denver's international airport.
