The Ktichen Manager for H&F Burger and Hop’s Chicken oversees all food production & execution, along with all culinary and utility staff. The Sous Chef will work in a supervisory role, coordinating closely with the Executive Chef to support the vision of the restaurant, to ensure the Best Cheeseburgers and Fried Chicken on earth! To aid in executing our culinary goals by sourcing the highest quality ingredients and preparing a menu that showcases them in simple, but exciting ways. To manage a kitchen efficiently that can process orders in a timely and consistent manner.

 

This is a top tier professional position that fosters an environment where expectations are continually exceeded and in which employees are treated with respect, encouragment and teaching.

 

Culinary Management

  • Establishing and maintaining our farmer and vendor relationships.
  • Taking a detailed inventory of the food storage areas to determine which items need to be re-ordered and responsible for giving the inventory list to the Chef de Cuisine.
  • Receiving food and food-related merchandise delivered to the kitchen in the mornings, inspecting them for quality and verifying that the invoice for each purchase contains correct information.
  • Completing order forms accurately and submitting them to the proper channels.
  • Working with Culinary Leadership on ingredient sourcing and advanced seasonal planning.
  • Conferring with Culinary Leadership to ensure that all kitchen tools and foodstuffs are fully prepared for evening service.

 

Staff Management

  • Performing supervisory duties, such as hiring, training, developing, evaluating, and disciplinary counseling of all on-site employees, under the direction of the Chef de Cuisine.
  • Ensuring staff is upholding leadership behaviors, core values and adhering to strategic and operational priorities.
  • Sharing inspiration and ideas with staff.
  • Ensuring that personnel issues are carried out in accordance with established company policies and procedures.
  • Maintaining open and clear communication with the staff.
  • Attending management meetings when scheduled. Representing business at Resurgens management and leadership meetings.
  • Attending and participating in training seminars as requested.

 

Operations

  • Ensuring that all Equipment is in A+ condition
  • Ensuring that the kitchen is clean and ready to prepare food.
  • Scanning and entering invoices into Plate IQ
  • Ensuring completion of various daily, weekly, monthly and quarterly reports in a timely and accurate manner.
  • Reviewing reports and making operating recommendations to Executive Chef and Culinary Team.
  • Working with Executive Chef to monitor maintenance activities and preventive maintenance programs.
  • Maintaining open and clear communication with the Culinary, Service and Operational Leadership

The doublestack originally served at Holeman and Finch has since grown to three H&F Buger outposts – two within SunTrust Park and one in Ponce City Market’s famed food hall. Hop’s Chicken began as a Sunday special served at Restaurant Eugene, and has quickly become a local fried chicken favorite.
