Papilles restaurant is looking for a Sous chef

Papilles is located in the East-Village aimed by Andrea Calstier, Chef with previous experience in Michelin-Starred restaurants in France and in New-York. He is looking for a dynamic and motivated experienced Sous-Chef to work with him as a partner in the kitchen. Papilles is a 20 seats restaurant where quality is the priority. You will work with a small and nice team full-time. 

Duties: 

  • Prepare components of certain dish on our menu using the chef's recipes
  • Memorize and utilize our serving portion sizes and all meal prep procedures used in the kitchen
  • Ensure that the kitchen, all food prep areas and all food storage areas meet restaurant cleaning standards
  • Work with team of cooks to do portion prep work for other shifts when needed
  • Monitor product freshness and rotate out old product based on a schedule created by the restaurant
  • Ensure service (desserts and cold station)
  • Help develop the menu with Chef Andrea
  • Manage line cooks 

    Skills:
  • 4+ years’ cooking experience
  • High school diploma/GED required
  • Ability to work on your feet for eight hours or more a day
  • High level of professionalism
  • Comfortable working with a team in a fast-paced kitchen environment
  • Excellent verbal communication and organization skills
  • Must speak english
  • Experience in Michelin-starred restaurant preferred
  • Flexible schedule
