Job Details

Jean-Georges is seeking a Pastry Sous Chef for his new restaurant Jean-Georges at the Four Seasons Hotel in Philadelphia. Qualifications

  • A minimum of 4 yrs. experience within a pastry department.
  • 2+ yrs prior supervisory experience within a pastry department
  • Total understanding of proper pastry methods, techniques and standards.

 

Responsibilities (these are not all inclusive)

  • Assist with overseeing all items produced and executed in pastry department and ensure that they meet the restaurant’s standards for quality and consistency.
  • Work with receiving departments to ensure all pastry orders arrive in full and in good condition. Ensure pastry orders are replaced after checking par levels to maintain a consistent and usable par levels.
  • Prepare pastry items according to established recipes and standards
  • Lead group projects efficiently and productively.
  • Responsible for scaling up and down recipes.
  • Prepare all pre-plated desserts for banquet service as necessary.
  • Proficient in performing and managing all Pastry related administrative tasks as necessary.
  • Creates purchasing lists, weekly production sheets.
  • Assign and manage daily production sheets, update and reschedule production, manage daily production changes and labor schedules.
