Join Chef Jonathan Benno and Pastry Chef Lindsey Bittner as they open the doors on this exciting new bakery located inside The Evelyn Hotel.
Responsibilities will include:
- Mixing, shaping, and baking dough—Preparing rolls, pain de campagne, and focaccia for the bakery and restaurant
- Maintaining pre-ferments for daily production
- Milling local grains for use in some of our breads
You can expect to learn:
- Breads on our production for the bakery and restaurant, with room for growth/change within station in bakery, casual and fine dining restaurants
- How to mill and use whole grains for breads
- Opportunities to also learn pastry/viennoiserie production with Chef Lindsey Bittner
- Bakers percentages/math
- Team building and leadership skills (like how to expedite and run a succesful service)
- How your role impacts the success of business (basic financial skills)

The newly restored landmark the Evelyn Hotel, located in New York’s vibrant NoMad neighborhood, is home to the next chapter in Chef Benno’s culinary epic. He introduces three distinct, yet complementary concepts: Leonelli Taberna, a casual Roman trattoria, offering all-day dining; Leonelli Focacceria e Pasticceria, an authentically Italian inspired bakery and café; and his first eponymous project, Benno, a fine-dining restaurant serving Mediterranean cuisine. Having assembled expert culinary, beverage, and service teams—many of whom are alumni of Per Se and Lincoln Ristorante—these three projects represent the culmination of Chef Benno’s life-long dedication to the hospitality profession.
