Monteverde, a successful and busy Italian restaurant in Chicago’s West Loop, is looking to grow its team. The Monteverde team is passionate about serving delicious food with gracious and comfortable hospitality, each and every day.

We are currently hiring for Sous Chef, a position that helps to ensure the overall success of all kitchen operations. This position helps to oversee the kitchen’s daily culinary, operational and administrative tasks, including sanitation and safety.  This position motivates, trains, develops and directs the back of house employees to accomplish the objectives of the restaurant. Duties and Tasks, not limited to the following:

  • Have the ability to jump into any kitchen position at any time, have knowledge of menu in full, all prep items, and all station requirements.
  • Assist Chef with all hourly staff development, including but not limited to, hiring, training, performance reviews, revision of job descriptions, and disciplinary actions.
  • Undergo training on and develop a basic understanding of the restaurant’s purchasing, as well as its inventory management system (Compeat).
  • Assist Chef with recipe creation, including proper documentation of recipes into Compeat system before dish moves to the menu.
  • Expedite the kitchen line throughout service, helping to oversee front of house staff in running food properly.
  • Undergo training on and develop an understanding of the restaurant’s financials, specifically food costs and labor management.
  • Ensure proper menu writing and printing each day before service, including grammatical correctness and price accuracy.
  • Perform daily line checks of each station, including tastings and date checks.
  • Ensure proper maintenance of all equipment.
  • Ensure proper management of sanitation and safety standards.
  • Help to set up proper procedures for hourly staff, to ensure daily restaurant success.
  • Build an awareness of food allergy safety, including what allergens are present in what dishes at all times and training hourly staff on allergy safety.
  • Have the desire to build menu items and recipes independently.
  • HAACP Plan awareness.
  • Help oversee the execution of private events in or outside of the restaurant.

Qualifications

  • Experience working as a line cook for at least 2 years at a high caliber restaurant with frequent menu changes, and as a Sous Chef for at least 1 year.
  • Strong cooking ability and confidence.
  • Previous Sanitation Training.
  • Computer skills and experience.
  • Common sense.
  • Passion for what you do.

Physical Requirements

  • Ability to stand, talk or hear, and taste or smell. 
  • Walk; use hands or fingers, handle, or feel; stoop, kneel, crouch, or crawl; reach with hands and arms. 
  • Regularly lift and/or move up to 40 pounds and occasionally lift up to 50 pounds.
