Chef Lila Colello (Founder and Exec Pastry Chef) started Flakely in 2017 after being diagnosed with Celiac Disease herself, when she could no longer work in regular restaurants. She makes it her personal mission to release 'taste-identical' breads and pastries that can stand proudly next to any wheat flour counterpart without being detected as gluten free. Flakely is one of a handful of GF bakeries in the world that excel in production of gf croissants and Danish, and they ship their product all across the US, in addition to servicing the local GF community in Philly.
