Chef and Owner Darren McGraw today announced the opening of Ampersand Wine Bar in Chicago’s Ravenswood neighborhood, set to launch June 26, 2015. McGraw has cooked in twelve countries and five U.S. cities, and served as head pastry chef for world-renowned chef Charlie Trotter and opened Wolfgang Puck’s Cut & Sidebar and Michael Mina and George Morrone’s Aqua. In addition, McGraw developed his highly praised break-baking skills under Nancy Silverton and Mark Peel at Campanille and La Brea Bakery. Located at 4845 N. Damen, the intimate space will offer refined service, accessible wines, and delicious small plates along with desserts McGraw has developed over decades in many kitchens.
Now in 2015, after taking his recipes aboard, spanning many diverse locales, including Thailand, Malaysia, Singapore, Germany, Czech Republic, Slovakia, Belgium, England, Egypt, and Israel, McGraw reemerges in his native Chicago, introducing his love of food and wine with his brand-new restaurant.
The ampersand is the connection between ideas and possibilities. At Ampersand Wine Bar, we will be bringing together refinement and comfort, wine and cuisine, family and community. After two decades of cooking and baking in elite kitchens with celebrated chefs, I am thrilled to open the doors to this dream, and to a place where we can all connect.
Ampersand Wine Bar will host afternoon tea service daily from 3:00 p.m. to 6:00 p.m., featuring light fare perfect for an early dinner, late lunch, friendly meeting of afternoon indulgence. Guests will enjoy a refined menu of pastries, sandwiches, salads, coffee and tea, plus wine and spirits.
Additionally, diners will be able to slide into a bar seat, cozy up to a table or settle in to the outdoor summer lounge during evening service that includes refined small plates, rustic comfort dishes, classics made modern and “damn good desserts,” including foie gras torchon with fig and brioche, Lyonnaise salad with frisee and hen egg, scallop with sweet peas and pickled ramp, lamb belly with heirloom carrot and spiced hummus, beef shank with cauliflower and chile, and strawberry short cake, chocolate with brioche and raspberry, plus a mini platter featuring a daily selection of cookies, candies, and chocolates.
Ampersand will be open Tuesday through Thursday from 3:00 p.m. to 10:30 p.m., Friday from 3:00 p.m. to 11:00 p.m., Saturday noon to 11:00 p.m., and Sunday noon to 10:00 p.m. For more information, visit www.ampersandchicago.com.
