de Quay is the realization of a dream for Chef/Owner David de Quay. This dream extends back to David’s early childhood wishes to become a Chef, and wonderful memories of his first taste of Dutch cooking from Oma’s garden, and her kitchen in Holland. His culinary education began at Michigan State University’s School of Hotel and Restaurant Management, continued as an apprentice in the European brigade system at The Greenbrier Hotel, and finished recently with the program at the French Pastry School. The career path led his passion for cooking to many excellent kitchens, including those of The Ritz Carlton Hotel Company, The Willard Hotel, Gordon Restaurant, Rhapsody Restaurant, staging at The River Cafe, the University Club of Chicago, and finally as Executive Chef at Hinsdale Golf Club.
Throughout his career, the idea of opening his own unique restaurant remained in the background, until the opportunity to do so finally came to fruition. He is pleased to see the dream realized in the creation of de Quay Restaurant, an extension of his Dutch family heritage, and the melding of the long history between the Netherlands and Indonesia.
His hope is to introduce a unique concept which integrates the two cuisines in a contemporary, understandable, flavor- focused way. The foundations of this dream are the comfort and pleasure of our guests dining experience, an excellent beverage program created to pair with the menu, friendly, attentive service, and a casually elegant, warm surrounding.
Located in the heart of Lincoln Park at 2470 N. Lincoln Avenue, the intimate, inviting space seats 45 in the dining room and an additional 20 at our vintage bar, lovingly restored from its 1940 glory.
